Hi, guys. Welcome back to freeze drying mama. Oh, my goodness. So remember how we were doing that camping planning whole thing. So I got up to like, I think it was my taco night and my son broke his wrist. So we had to cut our camping trip short. So I’ve got some others that he’s fine. Thank you. I’ve had already had a lot of people reach out to me and see how he’s doing.

He’s doing good. Thank you. He had surgery. His wrist is fine. But I’ve had to re construct how I’m going to be doing the rest of the camping meals. But, I did want to cover my keto stuff. So, okay, so you can see I’ve got a new kitchen which we’re going to sell our home. So we are doing things that don’t use the oven right now because I don’t have a stovetop.

My stovetop is gone. It was broken, so I had to get a new one. And delivery is like three months out. So, we are doing something that doesn’t require a stove. I have an oven, but not my stove. So I’m doing keto toffles. And I’m back on keto because girl can’t handle carbs. So sad, but it’s fine. Okay. So we have powdered egg cause I’m going to do a truffle.

If you’ve ever, if you’ve ever had a keto truffle or you’ve never had a keto truffle they’re amazing. If you’ve had them, you know, how amazing and how versatile they are. They’re great. All they are literally is egg and cheese. You can change them and make them savory. You can make them sweet. You can make them all kinds of things.

You can put pineapple, or not pineapple. You can put pepperoni in them. I like to put pepperoni slices in with my daughter. You can add seasonings. I like to add crushed red peppers. So this one, one thing I love about this, is sometimes we’re not able to cook up the oven, you know, get the oven heated, when we’re gonna do things with our food storage.

So some things, like, you can’t make bread, right? But certainly, if you have like a small electric generator, or a gas generator, or a solar power generator, you can hook up your waffle iron. And this makes bread. That’s what it, essentially what a chaffle is. It’s like a bread, or a chaffle, or you can use it for anything.

Okay, so what I’ve got are my ingredients. I have freeze dried mozzarella cheese. And I have freeze dried powdered egg. So all I’m going to do is combine them. So, alright. So they’re just combined. And now I’m using cold water. Never, ever, ever, ever, ever, ever, ever reconstitute your powdered eggs with hot water.

They go through a heat structure, which is fine in the freeze drying concept, but that’s because there’s no water in it. There’s no liquid, right? It sucks the liquid out. As soon as you introduce that liquid in there, that’s when your proteins start to nature, denature, and your egg cooks. And we don’t want that yet.

We don’t want it to cook yet. So I’m just going to dump in the water. You don’t need a ton. It’s supposed to be kind of sloppy, but remember it has to reconstitute. I’m just going to use a spoon because it’s nothing fancy.

And I’m going to let it sit for a couple of minutes to let that mozzarella cheese really absorb that water.

I don’t want to put anything dirty on my new scowler, still trying to get used to the granite. I might even put the lid on, give it a little shake, and let it sit there for a minute. Okay, and then I got to thinking, maybe I do kind of want like a savory one. I’ve got some spinach here, some freeze dried spinach.

I’m going to add that, because why not? It’s spinach, right? I love the sound of freeze dried stuff. I just think it sounds so cool. And I can have spinach on keto. My kids are always like, eat it. And then they eat it anyway. And then I’ve got some freeze dried, freeze dried mushrooms. I’m going to add those too.

Because I love mushrooms. We’ll kind of make this, it’s almost going to be like a chafl omelette. Chafl omelette. I’m not sure what I would call it. Right? Chafl omelette? Whatever. And I’m going to add some of this because I love it. I like heat, so you can add as much as you want. You don’t even have to add a ton.

Or any. Salt’s always a good one. So, now I’m going to mix it, mix it, mix

it. And we’ll wait another couple minutes. It’s only been like four. Okay, guys. Alright, so I’ve let it sit for quite a while. And I can tell that it’s pretty much done because when I kind of push on the mozzarella, it feels like it’s not as hard and crunchy anymore. It’s actually pretty soft. So I’ve added the mushrooms and the spinach.

You can see it looks kind of gross. I’m going to have my son come around here. And this is my husband’s like 50 cent waffle iron and you can tell my kids use it less and I don’t care. I seriously am that mom. I don’t care. So spray it with a little bit of oil. Put my mix on here. I’m gonna spread it out.

Oh, this is gonna be yummy. Alright. So the best thing to do with a chocolate is when it’s sitting on the waffle it’s got, you have the same mindset as when you make an actual waffle. You want to wait until the steam. kind of disappears. And then your next best thing is when doesn’t stick any more when you lift it up.

Cause when you lift it up the cheese is gonna be all sticky, it just does that, that’s just how it is. But once it forms like this shell then it won’t do that anymore. So you really just wanna kinda wait until the steam goes away first and then it’s not sticking any more when you pull it apart. So again, I’ll be back in a few minutes as soon as my truffle is ready and maybe I’ll get to eat something delicious.

Ok, I’ll be right back. Hey guys, ok, so so, I did a thing, and it’s not a good thing. I pulled it apart too soon because I was talking to my son. And… Oh, it’s all messy. Look at that. Oh, what a cluster. It’s alright, though, because… Look at that. Oh, yes. I’m still going to eat the crap out of this. This looks so good.

The mushrooms are just… So yeah, this is what you gotta do. Sometimes life goes on, and guess what? It’s not always pretty, and I don’t care. I’m not that type of person. If you’ve been with me for any length of amount of time, let’s see, how long is this video? Three minutes? If you’ve been with me for three minutes, you know I don’t care how things look, so Yeah, I’m that person.

This is hilarious though. I did spray it though, in my defense. Oh, I’m gonna get yelled at, because I’m putting a fork on this stuff. Ooh, it’s so pretty though. It is pretty in the parts where it worked. Look at that one. Ooh, yes. Okay, so essentially, you’re gonna have a mess to clean up, if you do it my way.

I pulled it up too soon, that was my fault. Right after I got done telling you that, to wait until it pulls up, until it doesn’t pull apart. And I pulled it up before the steam was gone. Look at that cheese, it’s all nice and stringy. It’s fine. It’s not a big deal. Okay, so because I’m horribly embarrassed right now.

Actually, I’m not. Don’t look here. I’m actually going to unplug this and finish that. But I’m going to try a bite of it. I Don’t usually put salt in my chaffles. I feel like the mozzarella cheese already has enough flavoring in it. I’m just gonna go for it. If I was going to add anything to this, I would probably add, oh gosh, you could add marinara, you could dip it in marinara sauce, or you could do like salsa.

Both are good. If you’re keto, I would recommend salsa. And especially like a pico de gallo. That’s really, really good. And keto friendly. So. Yeah, it doesn’t need salt. Huh. I will definitely be able to be on keto back into the end of the world. Because, I have more mozzarella cheese. freeze dried. And I think I have anything else.

Yeah, that’s really good. So I’m gonna show you, you can see how it kind of falls apart, but it’s still, it’s still crunchy. That’s one thing that’s excellent about a truffle. Now again, if you don’t want it to be this kind of savory flavor, which I have going on here with the spinach and stuff, you can add like cinnamon to it.

I really like cinnamon and brown sugar, brown sugar. It’s like a swerve version of the brown sugar for keto. That makes it kind of like actual waffle. If it turns out good and it doesn’t look like this chaotic mess that I’ve got in front of me, and it’s actually a waffle style of truffle then you can use it for sandwiches and you can use it for, I mean, all kinds of things.

It’s so fun as a sandwich. We, my daughter and I use them for pizza, like pizza style sandwiches. There’s so much you can do with them. They really have a lot of flavor. The egg makes the cheese just really come together. It’s a really great binder. Just don’t do what I did. Don’t open it too early. Don’t get distracted.

Of course I would do that, right? Okay, so I’m gonna have more of those camping videos coming up. They won’t necessarily be camping because my son did break his wrist, so we might just do it here. Again, I don’t have a stove, so it’s gonna be having to use it in like a maybe, maybe a power free situation. I can do that.

Or just using a microwave or something, because we always have our limitations, don’t we? So, I’ll have some more of those coming up, but I did want to do the chaffle video for you guys. I had a really sweet lady add and request it, so I’ll do some more keto videos since I’m coming back on to keto.
